1/2 Cup Fresh Cilantro, chopped

1/4 Cup Fresh Basil, chopped

1 English Cucumber, cut into matchsticks

1 Red Bell Pepper, cut into matchsticks

1 1/2 Cups Fresh Bean Sprouts

2 lbs. Ground Chuck

2 tsp. Kosher Salt

3/4 Cup bottled Thai Sweet Chili Sauce

4 Green Onions, sliced

1 Cup Spicy Thai Kettle Chips, slightly smashed

2 to 3 Tbsp. Vegetable Oil

6 Potato Hamburger Buns, split

Preheat the grill to medium-hot fire.

Directions:

Whisk the mayonnaise, cilantro, and 1 Tbsp. of limejuice, in a small bowl.

For the salad, in another small bowl, whisk the limejuice, olive oil, sweet chili sauce, salt, 1/2 a cup of cilantro, ginger, and basil.

In a large bowl, combine the red pepper, bean sprouts, and cucumber and toss with the limejuice dressing.

Combine the chuck, 3/4 of a cup of sweet chili sauce, green onions, salt, and chip pieces.  Shape into 6 patties.

Brush the grill with vegetable oil, and place the patties on the grill.  Cook for 5 to 7 minutes per side, with the grill covered.  Toast the buns, cut side down, for the last 2 minutes of grilling.

Serve by spreading the cilantro mayonnaise on the cut sides of the buns, place the burger on, and top with the Thai salad.
