Stuffed Feta & Herb Burger Recipe


When you bite into this burger, you get a delicious surprise.  Just like a Twinkie.


Ingredients:

2 lbs. Lean Ground Beef

1 Tbsp. Olive Oil

1 medium Onion, grated or minced

1 tsp. Sea Salt

1 tsp. Freshly Ground Pepper

1 Tbsp. Sweet Paprika

2 tsp. Dried Greek Oregano

2 Tbsp. Dried Breadcrumbs

2 Eggs

1/2 lb. Feta Cheese, finely diced

1/4 Cup Spring Onions, finely chopped

4 Garlic Cloves, minced

1 Tbsp. Fresh Flat-Leaf Parsley, finely chopped

1 Cup Strained Yogurt

1 tsp. Extra Virgin Olive Oil


Directions:

Combine the ground beef, olive oil, onion, salt, pepper, paprika, oregano, breadcrumbs, and eggs.  Mix together with your hands, until well blended.  Shape 12 thin patties.


Mix the feta, spring onions, garlic, and 1/3 of the parsley, stirring until well blended, in a bowl.


In another bowl, mix the remaining herbs, yogurt, and the tsp. of olive oil, then cover and refrigerate.


Put a spoonful of the cheese mixture into the middle of 6 patties.  Place the other 6 patties on top, and pinch around the edges to seal well.


Grill the burgers for 6 to 10 minutes, then flip and repeat.  Serve with the herb yogurt on a burger bun.

Yield: 6 burgers
