Portobello Burger Recipe
Here is a great vegetarian burger if you’re looking for something new to try.
Ingredients:
1 Garlic Clove, minced
1/2 tsp. Kosher Salt
2 Tbsp. Extra-Virgin Olive Oil, divided
4 Portobello Mushroom Caps, stems and gills removed
4 Burger Buns of your choice
1/2 Cup jarred Roasted Red Peppers, sliced
1/2 Cup Tomato, chopped
1/4 Cup Feta Cheese, crumbled
2 Tbsp. pitted Kalamata Olives, chopped
1 Tbsp. Red-Wine Vinegar
1/2 tsp. Dried Oregano
2 Cups Mixed Baby Salad Greens, loosely packed
Preheat the grill to medium-high heat.
Directions:
Mash the garlic and salt with the side of a knife until it’s a smooth paste.
In a small bowl, mix the paste with 1 Tbsp. of oil and lightly brush the oil mix over the Portobello mushrooms. Save the rest of the oil for the buns.
In a medium bowl, mix the tomato, red peppers, olives, feta, oregano, vinegar, and the other Tbsp. of oil.
Grill the mushrooms, for about 4 minutes per side, and toast the bread, for about 1 minute.
Toss the greens with the red pepper mixture and add on top of the mushrooms.
